Rapeseed oil For deep frying

Potatoes – peeled and cut into chips 12.5kg

Method
Heat the oil to 130˚C
Cook the chips until they are soft but not coloured – around 10 mins
Leave to one side
Increase the temperature of the oil to 180˚C
Fry the blanched chips for 2 minutes or until golden and crispy
