  1. In a large mixing bowl or pan add the chicken
  2. Season to taste – perhaps test some on chicken and cook, prior to serving to children to check that it is not too spicy for their taste
  3. Cook in the oven at 180˚C until the chicken is cooked to 75˚C in the middle
  4. Serve with Caribbean rice and peas, and fresh salad
